Arquitetura de vinícolas: elementos para elaboração de projetos

Abstract

The theme of this dissertation is the architecture of wineries, presenting reflections and elements for guidelines related to the facilities and the way of designing commercial wineries to produce wines. The architecture of wineries is the expression of the result of the power of transformation of man on the territory, where he leaves his marks over the years. In this sense, the objective of the research was to propose elements for the elaboration of architectural projects of wineries, adopting the principle of sustainability, considering the cultural, environmental and landscape contexts. The study area was restricted to the main winegrowing municipalities of the Serra Gaucha (RS). Initially, the basic concepts for the theoretical basis and the choice of the research method were identified and deepened, for which the exploratory method was defined. The bibliographical survey, in printed and digital sources, explained the evolution of regional winemaking, including the construction of wineries, and the identification of foreign wineries, which are references in architectural terms, some of which were visited between 2017 and 2019. Based on the analysis of information about the wineries in the Serra Gaucha region, 40 wineries were pre-selected to produce fine wines (white, red and rose) and sparkling wine, using the traditional and Charmat methods. From these, five (5) wineries were selected for the research, by means of an online questionnaire, in order to characterize the spaces of the different viniculture sectors, in the environmental and landscape contexts, according to the needs of the processes and the sustainability. The integrated analysis of the information allowed to elaborate a set of guidelines for the elaboration of architectonic projects of wineries in the region of Serra Gaucha, sustainable, territorially adequate and committed to its environment.
