dc.descriptionA Serra Gaúcha apresenta uma excelente aptidão enológica para produzir vinhos espumantes de qualidade. O desenvolvimento de algumas tecnologias, como por exemplo, o uso de leveduras selecionadas, tem contribuído em aportar uma maior complexidade e tipicidade aos espumantes. Neste trabalho foram avaliadas as características físico-químicas, organolépticas e compostos voláteis do vinho base e dos vinhos espumantes naturais elaborados com diferentes cepas de leveduras pelo Método Tradicional. Foram avaliados oito cepas de leveduras secas ativas comerciais, sendo Saccharomyces cerevisiae (Zymaflore VL3®, Zymaflore X5®, Zymaflore X16®), e Saccharomyces cerevisiae rf. bayanus (Blastosel Delta®, Maurivin PDM®, Zymaflore Spark®, La Claire SP665®, Lalvin EC1118®). O vinho base e os vinhos espumantes foram analisados quanto à composição básica conforme a metodologia oficial brasileira. Além disso, foram analisados os compostos voláteis, através de cromatografia gasosa e os vinhos avaliados sensorialmente por uma equipe de onze degustadores qualificados. Os resultados das análises básicas do vinho base e dos espumantes mostraram que, independente da levedura utilizada na tomada de espuma (segunda fermentação), a fermentação foi concluída de forma adequada, apresentando teor alcoólico médio de 12,01% v/v e açúcar residual de 1,78 g/L. Poucas variações foram encontradas entre os espumantes obtidos quanto às análises básicas. Quanto aos compostos voláteis, os vinhos espumantes comparados ao vinho base, apresentaram maior concentração de 2-metil-1-propanol, 2-metil-1-butanol, dietil succinato e dodecanoato de etila, e redução nas concentrações de 3-metil-1-butanol, acetato de isoamila, cis-3-hexen-1-ol, trans-3-hexen-1-ol, decanoato de etila, acetato de feniletila e ácidos graxos. Nas características aromáticas, os espumantes exibiram uma tendência geral de redução na intensidade de frutado, floral e vegetal, e aumento significativo na intensidade de levedura, em relação ao vinho base. Foram detectadas importantes diferenças nos compostos voláteis e nas características organolépticas entre os espumantes obtidos com distintas leveduras. Entre as leveduras avaliadas, os espumantes obtidos com a levedura X5 apresentaram as maiores concentrações de butanoato de etila, acetato de isoamila e hexanoato de etila, compostos responsáveis pelos aromas frutados (pêra, banana, maçã), fato que justifica as suas altas notas de intensidade de aroma, frutados, florais e fineza aromática. Entretanto, os espumantes obtidos com a levedura SP665 exibiram as melhores características considerando os três parâmetros relacionados à espuma, além de intensidade e fineza de aromas e características gustativas favoráveis. Quanto à qualidade global dos espumantes, destacaram-se com as maiores notas as leveduras SP665, X5 e X16. O presente trabalho contribui para a escolha da levedura mais adequada para o enólogo a partir da comparação das características organolépticas, físico-químicas e a composição aromática do vinho base e dos vinhos espumantes. Porém, a elevada variabilidade detectada entre leveduras confirma a necessidade de testes específicos visando à obtenção de espumantes com características sensoriais particulares.pt_BR
dc.description.abstractThe Serra Gaucha region shows an excellent oenological aptitude for the production of high quality wines and sparkling wines. The development of some technologies, such as the use of selected yeasts has contributed to provide a greater complexity and typicity of sparkling wines. In the present work we evaluate the influence of different yeast strains on the physicochemical characteristics, organoleptic properties and volatile compounds of natural sparkling wines elaborated by the Traditional Method. Eight active dry commercial strain of yeast were evaluated: Saccharomyces cerevisiae (Zymaflore VL3®, Zymaflore X5®, Zymaflore X16®), and Saccharomyces cerevisiae rf. bayanus (Blastosel Delta®, Maurivin PDM®, ZymafloreSpark®, La Claire SP665®, Lalvin EC1118®). The base wine and the sparkling wines were analyzed for their basic composition according to the Brazilian official methodology. Besides, volatile compounds were analyzed through gas chromatography and the organoleptic characteristics evaluated by a team qualified tasters. The results of the basic analyses of the base wine and the sparkling wines showed that independent of the yeast used in the second fermentation, the overall process was concluded in an adequate way, showing an average alcohol content of 12,01% v/v and residual sugar content of 1,78 g/L. The basic analysis showed minimal variation among the sparkling wines obtained with the different yeast strains. A comparison of the volatile compounds of the sparkling wines and the base wine showed an increase of 2-methyl-1-propanol, 2-methyl-1-butanol, diethyl succinate and ethyl dodecanoate, and a reduction in the concentration of 3-methyl-1-butanol, isoamyl acetate, cis-3-hexen-1-ol, trans-3-hexen-1-ol, ethyl decanoate, phenylethyl acetate and fatty acids. Considering the organoleptic characteristics, the sparkling wines showed a general tendency of reduction in the intensity of the fruity, floral and vegetable aroma and a meaningful increase in the intensity of yeast aroma, in relation to the base wine. Important differences were detected in the volatile compounds composition and in the organoleptic characteristics among the sparkling wines obtained with different yeasts. Among the evaluated yeasts, the sparkling wines obtained with X5 yeasts showed the highest concentration of ethyl butanoate, isoamyl acetate and ethyl hexanoate, compounds responsible for the fruity aromas (pear, banana, apple), which justify their high notes of aroma, fruity and floral intensity, and overall aromatic quality. The sparkling wine obtained with SP665 showed the best characteristics considering the three parameters related to the foam quality, the intensity and finesse of aromas, and taste characteristics. Sparkling wines obtained with the yeasts SP665, X5 and X16 obtained the highest global quality notes. The present work contributes with the most adequate selection of yeast by winemaker, starting from the comparison of the organoleptic, physicochemical and the aromatic characteristics of the base wine and of the sparkling wines. However, the highest variability detected among sparkling wines obtained with the yeasts evaluated confirms the necessity of specific tests of yeasts in order to obtain sparkling wines with particular sensory characteristics.en
